Gramma M’s homemade cheezits
Ingredients:
2 cups shredded Colby Jack
2 cups flour
2 tsp salt
1/2 cup butter (frozen)
2-6 TBSP ice water
Shred cheese, add flour to cheese and mix. Grate frozen butter and add to cheese and flour. You can cut the butter in the mixture but I just gently tass it around till it’s all combined. Add the salt and combine. Then 1 TBSP at a time add the ice water while mixing. Only add enough water until the dough come together you don’t want it sticky just enough to form a ball. Make a patty then wrap with plastic wrap and let sit in fridge for at least 45 mins.
Heat oven to 425. Roll dough out very thin. I cut and just do sections at a time. The with a pizza cutter cut into 1 in squares. Place squares on a parchment lined baking sheet you can lightly sprinkle some salt on top of you like them a bit more salty. Bake at 425 for 10-14mins. Until slightly brown around the edges. Let cool and enjoy. 😁
Gramma M’s Scotch-a-Roos
Ingredients:
- 1 cup light corn syrup
- 1 cup sugar
- 1 cup peanut butter (creamy is best)
- 6 cups Special K cereal
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
How to make them:
- In a big pot, mix corn syrup and sugar. Heat on medium until it just starts to boil – then take it OFF the heat! Don’t let it boil too long or they get hard! 2. Stir in the peanut butter until smooth. 3. Dump in the 6 cups of Special K and stir fast until coated. 4. Press into a 9×13 pan that you sprayed with cooking spray. Wet your hands a little so it doesn’t stick to you. 5. In a small pot, melt chocolate chips and butterscotch chips together until smooth. Spread on top. 6. Let them cool or they will fall apart. If you can wait. My grandson cannot. LOL.
Cut into bars. Hide some for yourself.
Tip from Gramma M: These are great to make WITH your kiddo – scooping, pouring, pressing. Good sensory work. And they actually fill them up because of the peanut butter!
Chia Pudding
1 can of coconut milk
3/4 cup chia seeds
1 1/2 cup unflavored Greek yogurt.
2 TBS honey
Mix coconut milk and chia seeds in a bowel and let sit for 5 -10 mins
Add yogurt and honey. Mix well and refrigerated for at least 15-20 mins.
Serving- I like to drizzle a little more honey on before eating. We also like adding fruit like blueberries or strawberries.
One of my favorites my mom used to make.
Bommers
5-6 Italian sausages, uncooked
1 large can tomato sauce
5-6 bommer buns or brat buns will work.
1-2 cups shredded mozzarella cheese
1 tsp Italian seasoning
1 tsp garlic powder
Cook sausages in a pan until done. In a crockpot or large pot add the tomato sauce and seasoning. Then add cooked sausages to pot or crockpot. Cook on low for 3-4 hrs.
when ready to serve. Add some shredded mozzarella cheese to bottom of the bun. Spoon some sauce from the pan on top of the cheese. Then add a sausage on top of that. Top off with a little more sauce and a sprinkle of mozzarella. And enjoy!!!
